How to Make Goldenrod Jelly

Recipe

To make a small batch that will fill one half pint mason jar:

  • 180 grams – goldenrod infusion
  • 180 grams – sugar
  • 12 grams – pectin
  • 3 grams – acid (lemon juice)
  • 0.5 grams – butter

 

Method

First we need to make an infusion of our flowers. Based on this article from Herbal Academy, I found the optimal ratio for a strong and flavorful infusion to be 1 (flowers) : 6 (water) by weight. So If you are using 2 cups of water (480g) you’ll want to use around 1 packed cup of flowers (80g).
